The 'Peatlands Loaf' is a traditional country-style sourdough bread made with a blend of organic flour from Shipton Mill UK, including white & wholemeal wheat flour and wholemeal spelt flour.

The loaves are baked in a stone oven to achieve a blistered, caramel crust with a soft creamy-coloured crumb, flecked with nutritious wholemeal bran. 

 

Each Peatlands Loaf is carefully made over three days; hand-shaped and proofed slowly in wooden bannetons to allow the natural leaven to develop a loaf with a fuller flavour and a more open crumb. 

It is perfect for loading with toppings and spreads and it makes the BEST toast!

 

The loaf is named in honour of the wild and ancient landscape in which the micro bakery is situated. We are adjacent to Garry Bog, one of the largest remaining areas of undamaged lowland raised peat bogs in Northern Ireland; one of significant international importance. 

 

The bread is delivered fresh on the day it was baked and is best enjoyed within 24 hours but can be enjoyed over the course of a week.  Store in a sealed container or plastic bag to preserve freshness and softness.
